Banana Streusel Muffins

Hi Loves! So last night I realized I had 3 bananas that were close to being ready to get thrown out just laying there on my counter. I decided to put my new cookbooks to use and look for a delicious banana bread recipe. Instead, I found this recipe for "Banana Streusel Muffins" (everything's better with a buttery, brown sugar, crumbly topping - yum!)



Banana Streusel Muffins

Streusel Topping
1/2 cup all purpose flour
1/2 cup light brown sugar
1/4 teaspoon coarse salt
1/8 teaspoon cinnamon
1/2 stick cold unsalted butter, cut into small cubes

Muffins
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 stick of unsalted butter, at room temp.
1 cup sugar
1 1/2 teaspoon coarse salt
2 large eggs, at room temp.
2 teaspoons vanilla
3 very ripe bananas
1/2 cup buttermilk (or sour-cream, yogurt)
*I added half a cup of chocolate bits and about a cup of chopped pecans

Directions
1. Streusel Topping - In a medium bowl whisk together flour, brown sugar, salt, and cinnamon
Next, add the cubes of butter and use your fingers to work it into the dry ingredients until pea-size crumbs form. Set aside in the refrigerator.

2. Preheat over to 375 and line the muffin pan or spray it with nonstick cooking spray

3. Muffins - In a medium bowl whisk together the powder, baking soda, and baking powder. Set aside.

4. In a bowl of a standing mixer fitted with the paddle attachment, beat the butter, sugar and salt on medium-high until light and fluffy (2-3 minutes) Add eggs one at a time, beating after each addition. Then add in and beat the vanilla and bananas.

5. With the mixer on low, add the dry ingredients. Beat until all the flour is absorbed. Then, beat in buttermilk. Fold in the chocolate and chopped pecans.

6. Fill the muffin cups evenly (2/3 full) and sprinkle the streusel mixture on each muffin

7. Bake 18-22 minutes (18 was good for me - but obviously this varies)

8. Enjoy!! They made my apartment smell divine
